Rachel lives with her husband, Geoff, and teenage son, Alex, in beautiful North Carolina. She was a program manager in her previous career. She enjoys reading, hiking, paddleboarding, fine dining, and delicious wine, preferably while traveling. When at home she volunteers with a local cat rescue.
Favorite Destination: Coast of Maine up to Bar Harbor/Acadia National park- we started our journey in Kennebunkport, an upscale coastal town in southern Maine. We enjoyed riding bikes throughout the quaint village and taking in the sites of the river and ocean. The restaurants there are phenomenal. Then we meandered up the coast to Bar Harbor and Acadia National Park. The rugged beauty of a mountain landscape set against the backdrop of the Atlantic ocean took my breath away. One of my favorite hikes of all time is in Acadia. The trail follows a previous rock slide so you have to work your way over and between boulders while gaining elevation. Once you reach the top of the mountain, you have absolutely stunning views of the ocean. There is also a restaurant in the park that is famous for their afternoon tea, popovers, and seafood. We had a fantastic dinner there overlooking a breathtaking lake with mountains in the background. Bar Harbor is a fabulous place to stay with luxe accommodations and tons of dining options, as well. We had a great time walking around the town, shopping and enjoying the ocean views.
Another one of my all-time favorite trips is Disney. Disney is one of those places where both kids and adults alike can have a blast. It is undoubtedly the place of my favorite family memories. We go every few years and enjoy our tried-and-true favorites but also make sure to incorporate new experiences each time, as well. Disney’s numerous lodging and dining options make it nearly impossible to try everything. So far my favorite hotels are the Yacht Club and Animal Kingdom Lodge. There is nothing cooler to me than sitting on your balcony watching zebras and giraffes grazing right in front of you. My favorite restaurants in Disney are Be Our Guest Restaurant in Magic Kingdom, Citricos in the Grand Floridian, Jiko in Animal Kingdom Lodge, The Hollywood Brown Derby in Hollywood Studios, and Cape May Cafe in The Beach Club resort for breakfast with characters. There are so many restaurants it can be overwhelming picking out the best ones. And you have to be careful because some restaurants are pricey but mediocre in quality. So it´s important to know which ones are worth it and which ones you can skip. Just writing this makes me want to go back asap.
